Is It Really That Doable to Pick Up Violin as an Adult, Even When Working Fulltime/parent/spouse Full Time?

Anything is doable…if you are commited to it!!!
You will get out of it what you put into it. Ask the instructor how much class and practice time you will be expected to put in. One class per week plus one hour of practice per day is often recommended for serious students. You could be less serious and take one class every two weeks and practice half an hour per day, if your teacher will agree.
Will violin be one of your college courses? If you are adding violin lessons to all those other responsibilities, you are taking on a big, big load.
If you think you can handle it, go ahead. Just try it out, and you can quit if you think you are too busy. No harm in giving it a try.
Instead of taking lesson from the college for credit (is that what you mean?), I would ask the college if they could provide a list of music students offering lessons, or check the bulletin boards around the music school for posted ads. This way, you would be helping out a music student, and the schedule is more flexible so you can work it out on an individual basis with the instructor. Taking lessons from a college (at least where I went to music school) requires an audition, and you have to be at an advanced level (they don’t take beginners). Plus if you miss a lesson, your grade is docked.
